Cook pasta as directed on package--except omit salt; drain. Rinse with cold
water; drain. Mix pasta and remaining ingredients. Cover and refrigerate
about 2 hours or until chilled. Serve on lettuce leaves if desired.

1 lb Pasta shells 2 tb Oil
1 1/2 c Mayonnaise 3 tb Lemon juice
3 tb Chopped parsley 1 ts Dried parsley
3 c Diced cooked chicken 6 oz Jar artichokes chopped and
1 ea Dash of tabasco 1 ea Toasted almonds

Cook pasta in large pot of boiling, salted water until tender, but firm, 8
to 12 minutes, stirring often. Drain well and rinse with cold water. Shake
out excess water and toss pasta with oil. Combine mayonnaise, lemon juice,
parsley and basil. Place pasta in large bowl. Add mayonnaise mixture,
chicken, artichokes and tabasco. Toss well. Garnish with almonds. For a
decorative presentation, serve in avacado halves, in tomato cups or on
lettuce leaves. Yields 6-8 servings.

Directions: About 2 Hours before serving, or early in the day: 1.
Preheat oven to 350F. Grease 9"x5″ loaf pan. In large bowl, mix first
7 ingredients. With pastry blender, cut in corn-oil spread until
mixture resembles coarse crumbs. Stir in bananas, undiluted
apple-juice concentrate, egg substitute, walnuts, and vanilla just
until flour is moistened. Spoon batter into pan. 2. Bake 60 minutes
or until toothpick inserted into center of bread comes out clean.
Cool bread in pan on wire rack 10 minutes; remove from pan and cool
slightely. Serve warm, or cool completely to serve later. Makes 18
servings.

Each serving: About 180 calories, 5 g. fat, 0 mg cholesterol, 135 mg
sodium.

In a large pot bring 6 cups water to a boil, stir in the barley and
salt. Reduce the heat, cover and simmer the barley for 40 minutes or
until tender. Drain the barley and rinse with cold water until it is
thoroughly cooled, drain well. In a blender combine the white wine
vinegar, garlic, jalapeno, cilantro and vegetable oil and blend until
smooth. Season to taste with salt and pepper.

In a large bowl combine the cooked barley and the dressing, mixing
well. Stir in the scallions, corn and tomatoes and season to taste.
Chill the salad, covered, and serve.

Rinse and drain barley. Sprinkle the barley into a large saucepan of

30 min, or until just tender. Drain the barley, rinse it under cold
water, and let it drain until cool. Transfer barley to a large bowl;
add bell pepper, corn, parsley, and salt and pepper to taste. In a
bowl whisk together the vinegar and more salt and pepper to taste,
add oil, whisking till dressing is emulsified. Toss the salad with the
dressing until well combined. The salad may be made up to 8 hours in
advance and kept covered and chilled but the parsley should not be
added til just before serving.

675 g new potatoes
2 tbsp tarragon vinegar

6 rashers smoked streaky bacon -- cut into thin strips

freshly ground black pepper
mixed salad leaves -- to serve

1. Heat a barbecue, grill or griddle. Season the chicken with salt and
pepper, then rub in one tablespoon of olive oil. Barbecue, grill or
griddle the chicken, skin-side down, for 8-10 minutes, then turn and cook
for another 8-10 minutes.

2. Meanwhile, boil the potatoes for about 20 minutes. Drain, then peel and
halve or quarter, depending on size. Mix the remaining oil with the
vinegar and shallots, season, then pour over the potatoes. Fry the bacon
until crispy, then stir it into the potato salad with the tarragon.

3. To serve, arrange mixed salad leaves on four plates, spoon over the
warm potato and bacon salad, and top with the chicken breasts.

NOTES : Barbecuing is such a great way to cook chicken because the slight
burnt tinge works so well with the natural sweetness of the meat.

These chicken breasts have just been seasoned, rubbed with oil and
then barbecued. Chicken with bacon or tarragon - or both - is a
classic combination, and the warm potatoes in olive oil dressing
bring all the tastes together, so this dish is a real treat. If
you don’t have a barbecue, simply grill or griddle the chicken
instead.

Push a knob of butter under the skin of the chicken before cooking
to give it a tastier, more succulent finish; and why not squeeze
some lemon juice after cooking to lift the flavours.

For a creamier potato and bacon salad, stir in two to three
tablespoons of mayonnaise.

4 c Potato chips - whole

Heat oven to 375F. Grease a 2-quart casserole. Put chicken and
celery into casserole. Blender - chop nuts and add to chicken. Put
2 cups of potato chips into blender container, cover and process 4
cycles at (stir). Empty onto wax paper and set aside. Repeat with
remaining chips. Put remaining ingredients into container, cover and
process at (blend) until smooth. Add to chicken and mix well.
Sprinkle potato chip crumbs over top and bake for 30 minutes. A cycle
is defined as a 1 second pulse operation with a pause for food to
settle before repeating.

FOR THE DRESSING:
Place the tomato paste, tamarind pulp, shallot, and
vinegar in a blender an mix well. Slowly add the oil a
drop at a time at first and then in a slow b steady
stream until it is all incorporated. Add the salt. Can
be kept in th refrigerator for 1 week.

FOR THE ONIONS:
Peel and slice one large red onion thick enough so
that you can handle the slices and they will not fall
apart when you cook them. Rub them with a little olive
oil and cook the onions over a charcoal fire or under
a hot broiler until soft. (Approximately 5 to 6
minutes per side.) Toss in a bowl with 1-1/2
tablespoons balsamic vinegar so that the slices become
single rings. These will keep refrigerated 2 to 3 days.

TO ASSEMBLE THE SALAD:
Wash and dry one medium handful (about 1 cup) spinach
for each portion and toss with enough dressing to coat
each leaf, being careful not to over-dres the salad.
Arrange the onions over the salad and serve. Always
serve salads on chilled plates.

CHEF'S NOTE: Tamarind pulp can be purchased at Latin
specialty stores.

250 g rice vermicelli
1 / 2 piece English cucumber sliced thin
130 g Crabmeat
1 piece chopped garlic cloves
1 / 2 TS Black pepper
2 TB lemon juice
1 TS Red wine vinegar

Wash and trim snwo peas. Put them in a bowl and pour in enough
boiling water to cover them. Let stand 10 minutes, drain and set
aside. Prepare the noodles in boiling water for 3-4
minutes. Drain in colander, rinse with cold water and set aside. In
a large bowl, combine noodles, snow peas, red pepper, cucumber, shrimp
and crabmeat. In a small bowl, combine ginger, garlic, sesame oil,
pepper, salt, vegetable oil, lemon juice and vinegar. For this
dip compared with the other ingredients and mix thoroughly. Chill until
serving.

1 / 2 LG lemon, juice
LG 4 egg yolks
1 / 2 C flour, all purpose,
- Sifted

Heat oven to 450 F. Place 4 shallow 9-inch oval casserole dish
on baking sheet. In each put 1 teaspoon of jelly, 1 tablespoon
cream and 1 piece of butter.

In mixer, beat egg whites on medium-high speed until they
soft peaks form. Gradually add vanilla sugar and lemon juice and
continue beating until stiff and glossy.

Use a large rubber spatula to gently fold egg yolks and flour in
beaten whites. Using spatula, transfer to 3 large mounds in the
mixture for each of the baking dishes, shape and smooth them out. Bake
until puffed and golden (about 8 minutes.)

Serve immediately.
